Palak Paneer | Gayathiri's Cookbook

Palak Paneer is a popular and delicious indian gravy which is usually served with rice or roti. It's a creamy dish consisting of paneer in a thick spinach paste and seasoned with spices.

Ingredients:
Paneer cubes- 20
Oil- 6 tbsp
Turmeric powder- 1/2 tsp
Salt- 3/4 tsp
Jeera- 1 tsp
Bay leaves- 2
Cinnamon stick- 1
Cardamom-3
Jeera powder- 1 tsp
Coriander powder- 1 tsp
Garam masala powder- 1 tsp
Red chilli powder- 1/2 - 1 tsp
Onion- 2
Tomatoes- 3
Spinach- 2 bunches
Heavy whipping cream 1/2 cup
Ginger garlic paste- 1 tsp

Directions:
1. Cut the paneer into cubes. Shallow fry them. Boil 3 cups of water and then switch off the heat. Soak the fried paneer in hot water for 5-7 minutes to make it soft.
2.Heat 2 tsp of oil .Once it is hot, add 2 bay leaves, 3 cardamom, 1 cinnamon stick and 1 tsp jeera, green chillies, ginger garlic paste and onion. Saute until translucent.
3.Add tomatoes, turmeric powder, salt and sugar.cook until soft.
4. Once the tomatoes are cooked, add jeera powder, coriander powder , garam masala powder, hing and red chilli powder.Saute for a minute. Then add 1/2 cup of water and cook until oil oozes out of the gravy.
5.To Blanch the spinach: Boil 6 cups of water. Cook the spinach with 1 tsp of sugar for 2 minutes without covering the pan. Take them out and put them in ice cold water for 2 minutes to retain the green color.
6. Split the cooked spinach. Add 1/2 of the cooked spinach to the gravy. Blend the other half and then add it to the gravy. This way you can avoid the mushy consistency of the gravy.
7.Cook until it has become thick.add the fried paneer and the whipping cream and cook for 2 more minutes.Then switch off the heat.
Palak paneer is ready!!
