Palak paneer Potli samosa

Ingredient quantity

Refined flour 2 cup
Carom seeds ½ tsp
Ghee 1 ½ tbsp
Salt 1 tsp
Palak puree ½ cup
Water as required + as required
Oil 1tsp + to fry
Ginger ½ tsp
Green chilies 1tsp
Green peas (Blanch) ½ cup
Red chili powder ½ tsp
Turmeric powder ¼ tsp
Coriander powder 1 ½ tsp
Jeera powder ½ tsp
Aam chur 1tsp
Salt to taste
Paneer 200gms
Fresh coriander Chopped 1 ½ Tbsp
Corn flour 2tbsp

For sweet chili sauce

Oil 1 Tbsp
Garlic 1 ½ tsp
Chili flakes 1tbsp
Sugar ¼ cup
Water as required
Red chili powder 1 Tbsp + ¼ tsp
Salt to taste
Vinegar 1 ½ tsp
Corn flour 2tsp
Water as required

Method

1. In a bowl add refined flour, carom seeds, ghee, salt, palak puree and mix it properly with hands.
2. Now add water as required in the dough, it should be a semi hard dough, and let it rest for some time.
3. In a pan add oil, ginger, green chilies chopped and sauté for a while, now add green peas and mash it with masher.
4. Now add red chili powder , turmeric powder , coriander powder , jeera powder, aam chur powder , salt to taste and sauté for 2 mins, it should not have any moisture.
5. Now add paneer in it and mash it properly and mix with the masala.
6. Add fresh chopped coriander in it & mix well.
7. Remove in a bowl mix them well and keep aside.
8. For sauce, in pan add oil garlic , chili flakes, sugar, water as required, red chili powder, salt to taste , vinegar, and let it cook properly.
9. Now in a bowl add corn starch and water and make slurry to add in the sauce.
10. Once the sauce is cooked add corn starch slurry in it and let in cook till one boil.
11. Keep the oil for heating.
12. Now make a thick corn starch paste for the samosa.
13. Roll the dough and cut into equal sizes with knife.
14. Now with the help of a rolling pin roll the dough in a size of puri, roll out all the dough balls.
15. Now apply the corn starch paste on one of the rolled dough, add the panner and peas filling and fold it in the floret shape.
16. Do the same with remaining rolled dough.
17. Once the oil is heated properly, press the potli from the centre again and put it in the oil.
18. Till the samosa are getting fried, do the preparation for plating.
19. Our potli samosas are ready.
20. Serve hot with sweet chili sauce.
