Chutney slathered slices of bread sandwiched with a chunk of paneer, coated in pakoda batter and deep fried - it is like bread pakoda but better.

PANEER SANDWICH PAKORA

Ingredients

250 grams cottage cheese (paneer), cut into 2 inch squares
8 white bread slices
¼ cup gram flour (besan)
Oil for deep-frying
¼ teaspoon turmeric powder
1 teaspoon red chilli powder + for sprinkling
1 teaspoon coriander powder
Salt to taste
1 tablespoon chopped fresh coriander leaves
Butter for spread
Green chutney for spreading
Date-tamarind chutney for spreading
Chaat masala for sprinkling

Method

1. Heat sufficient oil in a kadai.
2. Mix together gram flour, turmeric powder, 1 teaspoon chilli powder, coriander powder, salt and coriander leaves alongwith some water in a bowl to make a semi-thick batter.
3. Spread some butter on one side of bread slices.
4. To prepare one sandwich pakora, spread some green chutney on butter side of one bread slice and some date-tamarind chutney on butter side of another bread slice.
5. Place one cottage cheese square on the date-tamarind chutney side of bread slice. Sprinkle some chaat masala and chilli powder on top and cover with green chutney bread slice.
6. Dip each sandwich in batter and deep-fry in hot oil till golden brown and crisp. Drain on absorbent paper.
7. Halve, sprinkle some chaat masala on top and serve hot.
