Learn to make Paneer Steak - Easy To Cook Veg Main course Recipe By Ruchi Bharani Festive seasons and parties are inseparable. This festive season, Chef Ruchi Bharani brings you an easy to cook, deliciously filling paneer maincourse recipe called paneer steak. So spark up your Christmas party with the goodness of paneer and veggies. Ingredients:For paneer filing:1 tbsp olive oil2 tbsp celery (chopped)1/2 tsp garlic paste2-3 tbsp chopped onion1 tbsp red chilli sauceItalian pizza seasoning salt to taste500g paneer cut into squaresbread crumbs Salt to taste1/4 tsp garlic paste1 small onion, finely chopped2 tbsp chilli sauce3 tbsp all purpose flour (maida)3 tbsp cornflour1 tbsp cheese1 tbsp Italian pizza seasoningFor Paprika sauce-1 capsicum, cut lengthwise2 tbsp tomato sauce2 tbsp cheese2 cups milk2-3 tbsp red chilli flakes1 1/2 tbsp butterFor the veggies-200g broccoli1 carrot1 zucchini1 small onion, cut lengthwise4 baby corn, slicedMushrooms, sliced1 tbsp celery, finely chopped1/2 tsp garlic pasteFew basil leaves1/2 red bell pepper1 tbsp olive oilMethod:To make the paneer filling:- In a pan, add the olive oil, garlic paste, finely chopped celery and finely chopped onion and saute it for a few seconds.- Add the red chilli sauce and turn off the flame.- Add the Italian pizza seasoning and salt and saute. Remove it in a bowl and let it cool down. To make the veggies:- In the same pan, heat olive oil. - Once the oil is hot, add the garlic paste, fresh celery, onion, bell pepper, baby corn and broccoli and cook them for a few minutes.- Add salt, basil leaves, Italian pizza seasoning / mixed herbs, red chilli flakes and the mushrooms and cover the pan with a lid. - Open the lid and add the ketchup, thinly sliced zucchini and carrot, mix well and let them cook for a minute.- Add salt. Once the zucchini and carrot are tender, get the pan off the flame. Remove the veggies in a plate and let them cool down.To make the sauce:- In 2 cups of milk, add the cornflour and mix well.- In a saucepan, heat little butter.- Once the butter melts, add the capsicum and garlic paste and stir.- Add the milk mixed with cornflour and keep stirring. Let it cook until the sauce becomes thick.- Once the sauce thickens, turn off the flame.- Add the basil leaves, grated cheese, salt, red chilli flakes and ketchup and stir well.To make the batter:- In a bowl, add the all purpose flour and the cornflour. - Add salt, pepper and water and mix well. To make paneer steak:- Take two big square-sized slices of paneer. - Mix the onion filling with little grated cheese and layer it on the paneer. Cover it with the other paneer piece. - Dip the paneer in the batter and then coat it with the bread crumbs. Make sure it is well sealed from all sides.- Flash fry the paneer. To plate:- Spread little sauce on the plate. - Place the paneer slab on the sauce. - Top it up with the cooked veggies.
