Pav bhaji bruschetta is a delicious twist on the age old classic pav bhaji all Indians are familiar with. bruschetta loaded with mozzarella, grilled pav, fresh salsa dolloped over the spicy bhaji . Its the perfect way to welcome friends this monsoon.PAV BHAJI BRUSCHETTAIngredients1 French loaf1 tbsp oil1 medium onion, finely chopped1½ tsps ginger-garlic paste½ tsp red chilli powder2-3 medium tomatoes, finely chopped1 medium green capsicumSalt to taste3 medium potatoes, boiled, peeled and mashed1½ tbsps pav bhaji masala50 gms mozzarella cheeseFresh parsley sprigs for garnishingMethod1. Preheat oven at 220ºC.2. Heat oil in a non-stick pan. Add onion and sauté till lightly browned.3. Cut French loaf into slices.4. Add ginger-garlic paste to the pan, mix and sauté well. Add red chilli powder, mix and saute. 5. Add tomatoes, mix well, cover and cook till the tomatoes turn soft.6. Deseed and finely chop capsicum.7. Add salt to the pan, mix well, cover and cook till the oil separates.8. Add potatoes and mix well. Add pav bhaji masala, mix well and sauté. Add little water, mix, cover and cook on high heat for 3-4 minutes.9. Place bread slices on an ovenproof plate. 10. Add chopped capsicum to the pan, mix and cook till capsicum turns soft.11. Grate cheese into a bowl.12. Spread cooked bhaji on each bread slice, top with grated cheese, put the plate in the preheated oven and bake till the cheese melts and bread turns crisp.13.
