A wholesome one pot meal of veggies, minced chicken and pasta - delicious to eat, quick to make. PENNE IN CHICKEN BOLOGNAISE Ingredients2 cups boiled penne pasta250 grams chicken mince1 tablespoon olive oil 1 tablespoon chopped garlic1 teaspoon red chilli flakes1 medium onion, finely chopped1 medium carrot, peeled and finely chopped1 inch celery, finely chopped½ teaspoon fresh fennel 2-3 medium tomatoes, finely chopped1 tablespoon Tabasco sauce ½ tablespoon Worcestershire sauce3-4 fresh basil leaves + for garnishing Salt to taste3-4 tablespoons grated parmesan cheeseMethod1. Heat olive oil in a non-stick pan. Add garlic and chilli flakes and sauté for 30 seconds.2. Add onion, carrot and celery, mix and sauté well. Add fennel and mix. Add chicken mince, mix and cook for 2-3 minutes. 3. Add tomatoes, mix and cook for 2-3 minutes. Add Tabasco sauce and Worcestershire sauce and mix well.4. Tear 3-4 basil leaves and add alongwith pasta, toss and cook for 3-4 minutes. Add salt and toss. Add cheese and toss well. 5. Serve hot garnished with basil leaves.
