A wholesome one pot meal of veggies, minced chicken and pasta - delicious to eat, quick to make.

PENNE IN CHICKEN BOLOGNAISE

Ingredients

2 cups boiled penne pasta
250 grams chicken mince
1 tablespoon olive oil
1 tablespoon chopped garlic
1 teaspoon red chilli flakes
1 medium onion, finely chopped
1 medium carrot, peeled and finely chopped
1 inch celery, finely chopped
½ teaspoon fresh fennel
2-3 medium tomatoes, finely chopped
1 tablespoon Tabasco sauce
½ tablespoon Worcestershire sauce
3-4 fresh basil leaves + for garnishing
Salt to taste
3-4 tablespoons grated parmesan cheese

Method

1. Heat olive oil in a non-stick pan. Add garlic and chilli flakes and sauté for 30 seconds.
2. Add onion, carrot and celery, mix and sauté well. Add fennel and mix. Add chicken mince, mix and cook for 2-3 minutes.
3. Add tomatoes, mix and cook for 2-3 minutes. Add Tabasco sauce and Worcestershire sauce and mix well.
4. Tear 3-4 basil leaves and add alongwith pasta, toss and cook for 3-4 minutes. Add salt and toss. Add cheese and toss well.
5. Serve hot garnished with basil leaves.

Preparation Time: 10-15 minutes
Cooking Time: 20-25 minutes
