Guittard Choc-au-lait vanilla milk chips1tsp. peppermint extract1 1/2 tsp. peppermint extract3 or more peppermint candy canesDirections:First prepare the candy canes. Remove the wrapping and place them in a ziploc bag. Use a hammer, rolling pin or meat tenderizer to pound the candy canes, leaving some bigger pieces.Line a baking sheet with foil and tape the foil to the pan so it won't slip around. This will make spreading the chocolate much easier.Once that's done, place the milk chocolate chips in a double boiler over low heat. Stir the chips pretty constantly until they just melt.Then add 1 tsp. of peppermint extract to the chocolate. Stir it in and notice the consistency change. Continue to stir until the chocolate becomes smooth again.You may have to move the chocolate in the pan off the heat (the bottom of the pan with simmering water) for a moment so it doesn't get too hot.Once the chocolate is smooth again, spread it onto the the baking sheet. Spread it thin to about 1/8 of an inch thick using a spatula or a spreading knife.Let this chocolate cool 10 minutes before adding the white chocolate layer. Melt the white chocolate chips in the same fashion as the milk chocolate chips. The only difference is you add 1 1/2 tsp. of peppermint extract to the white chocolate.Spread the white chocolate layer over the milk chocolate a little at a time, spreading as you go. Sprinkle the crushed candy cane over the white chocolate and press the big pieces in with your hand.Place the bark into the refrigerator for 2 hours to harden. Then crack the bark into desired sizes with your hands.
