Perfect for sharing, and a seafood lovers favourite dish, Peri Peri Tiger prawns is a must-try recipe!

PERI PERI TIGER PRAWNS

Ingredients

8 tiger prawns, deveined with head and tail intact
1 medium red capsicum
3½ fresh red chillies
½ medium onion
Juice of ½ lemon
5-6 garlic cloves
2-3 fresh parsley sprigs + for garnishing
1-2 fresh oregano sprigs + for garnishing
½ teaspoon smoked paprika
Salt to taste
Crushed black peppercorns to taste
½ tablespoon red wine vinegar
1 tablespoon olive oil + for greasing and basting
1 tablespoon oil

Method

1. To prepare peri peri marinade, place the red capsicum directly on heat and roast from all sides till golden brown. Remove from heat and cool.
2. Discard the stems and chop the 3 red chillies, add to blender jar.
3. Roughly chop onion, add to blender jar alongwith lemon juice, garlic cloves, 2-3 parsley, 1-2 torn oregano leaves, paprika, salt, crushed peppercorns, red wine vinegar and 1 tablespoon olive oil.
4. Scrape out the skin, deseed and chop the roasted capsicum. Add to blender jar and blend into a smooth paste.
5. Place 3-4 coal pieces directly on heat.
6. Take the tiger prawns on a plate. Add peri peri marinade and rub well inside and outside the prawns.
7. Place a steel bowl in the center of a bowl and place the marinated prawns around it alongwith the marinade. Put the hot coal pieces in the steel bowl and drizzle oil on top. Cover the bowl immediately and keep for 1 hour.
8. Heat an electric griller and grease some olive oil. Place the marinated tiger prawns and grill from both sides till golden brown, basting with some olive oil.
9. Place the grilled prawns n a serving platter.
10. Roughly chop parsley sprig and torn oregano leaves. Slice remaining red chilli.
11. Serve hot garnished with chopped parsley and oregano leaves and sliced red chilli.
