Pia Colada G&T

Looking for the easiest cocktail recipe? Look no further because you just found it! And the best part is that this refreshing drink combines two classic cocktails: pia coladas and gin & tonics! Get the best of both worlds with gin, tonic water, coconut milk, pineapple juice, and crushed pineapple. Garnish with a maraschino cherry and a pineapple triangle for that old school pia colada feel. Your tastebuds will be in the tropics in no time

FULL RECIPE:

Makes 2
Hands-on time: 15 minutes
Hands-off time: 5 minutes

INGREDIENTS

tin (220g) crushed pineapple, drained
cup (60ml) coconut milk
2 shots (30ml each) gin
1 cup (250ml) pineapple juice
2 tins (200ml each) Schweppes Indian Tonic Water No Sugar

Serving suggestion:
Desiccated coconut, toasted
Fresh pineapple, cut into triangles
Maraschino cherries

METHOD

1. Divide the crushed pineapple between two tall glasses and add a tablespoon of the pineapple syrup to each. *Chefs Tip: For a trendy finish, dip the rims of the glasses in the crushed pineapple syrup and then in toasted coconut.

2. Divide the coconut milk between the two glasses and add a shot of gin to each. Stir to combine, crushing the pineapple slightly. *Chefs Tip: Leave the gin out for a mocktail version.

3. Top the glasses up with ice and divide the pineapple juice and Schweppes Indian Tonic Water No Sugar between the two glasses.

4. Garnish each glass with a pineapple triangle and a maraschino cherry. Serve immediately and ENJOY!
