PIZZA EGG TOAST

Ingredients

1 cup boiled tomato puree
3 tbsps tomato puree
6 whole eggs
4 white bread slices
1 tbsp extra virgin olive oil + for drizzling
1 tbsp finely chopped garlic
A large pinch of red chilli flakes + for sprinkling
Salt to taste
1 tbsp sugar
3-4 fresh basil leaves
¼ medium red capsicum
¼ medium green capsicum
¼ medium yellow capsicum
3 button mushrooms
Crushed black peppercorns to taste
Black olive slices as required
Mozzarella cheese cubes as required
Dried oregano leaves for sprinkling
Tomato ketchup to serve

Method

1. To make the pizza sauce, heat olive oil in a non-stick pan. Add garlic, mix and cook till it turns golden brown.
2. Add red chilli flakes, boiled tomato puree, and tomato puree and mix well. Add salt and sugar and mix well.
3. Tear basil leaves and add into the tomato mixture and mix well. Cook for 6-8 minutes or till the mixture thickens.
4. Cut the red capsicum, green capsicum and yellow capsicum into ½ inch triangles. Thickly slice the mushrooms.
5. Break in the eggs in a large bowl, add salt and crushed black peppercorns and whisk well with a fork.
6. Heat a non-stick tawa.
7. Dip each slice of bread in the eggs mixture and place it on the hot tawa. Drizzle some olive oil and cook for 1-2 minutes. Flip the slices, apply a portion of the prepared sauce on each slice.
8. Place a few slices of the cut vegetables on it. Place a few black olive slices and mozzarella cheese cubes on top. Sprinkle salt, cover and cook till cheese melts.
9. Sprinkle red chilli flakes and dried oregano leaves over the pizza toast sandwich. Diagonally cut in half and serve hot with tomato ketchup.
