'Pongal Special' How To Cook Coriander Rice By Preetha | India Food Network

Treat yourself to a refreshing meal this festive season with Coriander Rice. THe essence of the recipe is freshly chopped coriander and more importantly the coriander stems. Like a lot of South Indian dishes, Coriander Rice too can be made in no time and tastes heavenly.


Ingredients
1 Cup Cooked Rice
1 Small Bunch Coriander Leaves, Finely Chopped
Coriander Stems, Finely Chopped
1½ Tbsp Oil
1 Tsp Mustard Seeds
1 Tsp Urad Dal (Black Gram Skinned)
Few Curry Leaves
1 Tsp Chana Dal (Bengal Gram Spilt and Skinned)
Salt to taste
2 Fresh Chillies (Green and Red), Finely Chopped

TIP WHILE COOKING:

One can also use ghee instead of oil for a better flavour.

You can process coriander the way you like, either by grinding it with the chillies or finely chopping it.

If finely chopping the coriander, use immediately to avoid darkening of the leaves. Else, place in water till used.
