Poppy Seed Dressing

Ingredients for the poppy seed dressing:
cup olive oil
2 Tbsp. apple cider vinegar
2 Tbsp. white wine vinegar
tsp. salt
2 Tbsp. plain yogurt
tsp. onion powder
1 tsp. poppy seeds
3 Tbsp. local raw honey
2 tsp. fresh lemon juice
dijon mustard

Directions:
Place the above ingredients, except the olive oil into a medium size bowl and whisk until all the ingredients are well combined.

Drizzle the olive oil while you whisk until completely emulsified. Pour into a glass jar and refrigerate. Remember that olive oil will solidify in the refrigerator so take it out about an hour for it to heat back up and become liquid again.

As a shortcut, you can place the jar of poppy seed dressing into a bowl of warm water to speed up the process.

Salad Ingredients:
Baby greens which may or may not include spinach.
Red onion, thinly sliced
2 radishes, super fine dice
1 handful of organic blueberries
1 handful of organic raspberries
cup of raw almonds, toasted in a fry pan over med low heat for 3 to 5 min. Watch closely.
cup of crumbled goat cheese
cup of organic broccoli,cut into bite size pieces, then lightly steamed (2 minutes) so it still has a crunch.

Directions:
Place all salad ingredients into a large bowl and add poppyseed dressing. Toss until all salad ingredients are coated with dressing. Enjoy!
