Recipe for Potato Salad

Ingredients:
1 kg Yukon Gold potatoes
1 red onion
1 bunch of fresh parsley
1 lemon
1 tsp black pepper
2 tsp salt
cup cold-pressed olive oil

Directions:
Set a large saucepan to boil the potatoes;
Wash the potatoes, place into the saucepan with their skins, add 2 cups of water, and boil over medium heat for 30 minutes.
Meanwhile, peel the onion and slice it into thin semi-circles
Prepare a large mixing bowl;
First, place the sliced onions and salt into the bowl
Then, scour down the onions using your hands (you might appreciate wearing some gloves for this)
Peel the cooked potatoes, cut into ~ 2 by 2 (cm) pieces and gently mix with the onions
Wash the parsley, drain and finely chop them, then add to the salad mixture
Drizzle plenty of olive oil and freshly squeezed lemon juice on top of the salad
Finally, add freshly ground black pepper on top of everything, mix well, and pour into a serving bowl
MEDITERRANEAN STYLE POTATO SALAD goes perfectly with barbecued or roasted fish
