A spicy and flavourful Mangalorean prawn dish which is a must-try for every prawn lover!PRAWN GHEE ROASTIngredients:15-20 large prawns, cleaned, deveined and washed3-4 tbsps gheeSalt to tasteA pinch of turmeric powderA pinch of red chilli powder2 tbsps coriander seeds8-10 black peppercorns3-4 cloves1½ tsps cumin seeds4-5 dried red chillies8-10 garlic clovesSalt to taste1/3 cup yogurt, whisked1 tbsp tamarind pulp1 tbsp chopped jaggery10-12 curry leavesFried curry leaves for garnishMethod:1. Take prawns in a large bowl. Add salt, turmeric powder and red chilli powder and mix well. Set aside to marinate for 5-10 minutes.2. Dry roast coriander seeds, black peppercorns, and cloves in a pan till the spices turn fragrant. Add cumin seeds and dried red chillies and continue to roast for 1-2 minutes. Transfer this mixture on to a plate and allow to cool.3. Dry roast garlic cloves in the same pan till they turn lightly golden. Transfer this on to the same plate and allow to cool slightly. 4. Put the roasted mixture into a blender jar, add ½ cup water and blend to a fine paste.5. Heat ghee in a pan. Add the blended paste and sauté well. Add ½ cup water and mix.6. Add salt, mix, cover and cook for 4-5 minutes. Add yogurt, mix, cover and cook till fat separates. 7. Add the prawns, mix and cook on high heat for 1-2 minutes. Add tamarind pulp, jaggery and curry leaves. Mix, cover and cook for 2-3 minutes.8. Serve hot garnished with fried curry leaves.
