A super easy, eggless & chocolaty cake which can be made in a pressure cooker.

PRESSURE COOKER EGGLESS CAKE

Ingredients

1 cup butter
¾ cup chopped dark chocolate
1⅓ cups refined flour (maida)
2 tsps baking powder
1 cup powdered sugar
¾ cup buttermilk
2 tbsps slivered almonds
1 tbsp slivered pistachios

Method

1. Heat a pressure cooker on medium heat, place a ring stand in it. Cover it with a lid without the whistle and the cooker rubber. Let the cooker preheat for 5-10 minutes.
2. Melt together butter and chocolate in a bowl. Sift refined flour and baking powder directly into the bowl.
3. Similarly, sift the powdered sugar as well. Gently fold the mixture.
4. Add the buttermilk little by little and gently fold the mixture is well combined. Add almonds and pistachios and mix well.
5. Transfer the batter into a 6” greased cake tin and tap it a couple of times to remove air pockets. Sprinkle chocolate chips and place this tin on the stand in the preheated cooker.
6. Cover with a lid again without the whistle and the cooker rubber and cook for 45-50 minutes or till the cake is done. To check, insert a skewer into the centre of the cake and if it comes out clean, the cake is done. Remove the tin from the cooker and allow the cake to cool for 5-10 minutes.
7. De-mould and slice. Serve.
