Fresh lemon juice cup crumbled feta cheeseFresh BlueberriesBalsamic GlazeIngredients:1 cup quality balsamic vinegar cup brown sugar, packedDirections:Make the glaze first. Pour the vinegar into a sauce pan with the brown sugar and stir to combine over medium high heat. Bring the glaze up to a boil and then lower the heat to medium low for between 15 and 20 minutes. Stir the glaze occasionally. After it thickens and becomes syrupy, turn off the heat to cool.Preheat the oven to 400 degrees F.Gently ease slices of the prosciutto ham into a mini muffin pan creating little cups. Then place in the oven to bake for about 15 to 17 minutes.Take the cups out of the oven and turn them upside down onto paper towels to drain.Place the walnuts into a small frying pan over medium heat and toast until they become fragrant and brown. Set them aside to cool a bit and then chop into small pieces.Slice and chop the pear into small pieces and place into a small bowl. Squeeze fresh lemon juice over the pears and stir to coat.Add the walnuts and feta cheese to the chopped pear and stir to combine.Place the prosciutto cups on a serving dish and fill with the pear mixture, mounding in a much as you can.
