A protein-packed sandwich filled with the goodness of mushrooms and tofu.

PROTEIN SANDWICH

Ingredients

100 grams firm tofu, grated
8 brown bread slices
2 tsps olive oil
2 tsps butter + for applying
4 tsps finely chopped garlic
1 large onion, chopped
4 sprigs of fresh thyme, roughly chopped
20-25 button mushrooms, thickly sliced
Salt to taste
3-4 tbsps grated processed cheese
Black pepper powder to taste

Method

1. Heat olive oil and butter in a non-stick pan.
2. Add garlic and sauté till golden brown. Add onion and sauté till translucent.
3. Add thyme and mushrooms and sauté on high heat for 3-4 minutes. Add salt and mix well. Transfer into a bowl.
4. Add tofu, cheese and black pepper powder and mix well.
5. Apply butter on 4 bread slices and place a portion of the mixture on top of each bread slice. Cover with the remaining bread slices and apply some butter on top.
6. Heat an electric sandwich griller. Place the sandwiches on it with the butter side facing up. Grill for 4-5 minutes.
7. Diagonally halve the sandwiches and serve hot with tomato ketchup.
