A protein-packed sandwich filled with the goodness of mushrooms and tofu.PROTEIN SANDWICHIngredients100 grams firm tofu, grated8 brown bread slices2 tsps olive oil2 tsps butter + for applying4 tsps finely chopped garlic1 large onion, chopped4 sprigs of fresh thyme, roughly chopped20-25 button mushrooms, thickly slicedSalt to taste3-4 tbsps grated processed cheeseBlack pepper powder to tasteMethod 1. Heat olive oil and butter in a non-stick pan. 2. Add garlic and sauté till golden brown. Add onion and sauté till translucent.3. Add thyme and mushrooms and sauté on high heat for 3-4 minutes. Add salt and mix well. Transfer into a bowl. 4. Add tofu, cheese and black pepper powder and mix well. 5. Apply butter on 4 bread slices and place a portion of the mixture on top of each bread slice. Cover with the remaining bread slices and apply some butter on top.6. Heat an electric sandwich griller. Place the sandwiches on it with the butter side facing up. Grill for 4-5 minutes.7.
