: Pulled Pork Burger with pickled onion Honeykki

Todays menu is pulled pork burger with pickled onion.
This menu was featured on TV. I really wanted to try it, so I did.
This video is a record of my first pulled pork making experience.
The following recipe is the one that I used, but I cant say it is the absolute method as there may be a few variables.
It took me 3 days to make. The brining and baking takes a long time, so I dont recommend making it.
It was as delightful and special as the time it took to make. But Im definitely not going through that again.
I was a little bit disappointed by the lack of juice or texture like in burger patties. But if you love meat, you will also love this.

* Ingredients (8~10 served, 1 cup = 200ml)
3kg , 8
: 1, 1/2, 1/2, 2~3, 3
: 1, 1, 1, 1, 1

: 3, 3, 1

3kg pork shoulder, 8~10 burger buns
brine solution: 1L water, 1/2cup salt, 1/2cup sugar, 2~3 bay leaves, 3Tbs seasoning mix
seasoning mix: 1Tbs ground cumin, 1Tbs garlic powder, 1Tbs onion powder, 1Tbs chili powder
1Tbs cayenne pepper, 1Tbs salt, 1Tbs pepper, 1Tbs paprika powder, 1/2cup sugar
onion pickle: 2 large of onion, 2cup water, 1cup vinegar, 1/2cup sugar, 1Tbs salt, beet(*optional)
mustard sauce: whole grain mustard, honey mustard, chopped pickled

* Recipe

1. Mix all the seasoning ingredients.

2. Mix salt, sugar, water and seasoning mix until dissolved.
Add pork, brine and bay leaves in a large plastic bag and let it soak in the fridge for at least overnight.

3. Pat dry the soaked pork using paper towel and massage with seasoning rub.

4. Bake in preheated oven 100 for 8~12 hours.

5. Cover pork with foil and rest for 1~2 hours or turn off the oven and leave it inside.

6. Shred pulled pork with forks. You should remove the fat.

7. Slice the onion. In a large bottle, add sliced onion and pickle brine and let it rest for 1 hour.

I added beet for color. Beet is just optional.

8. Melt the butter on a pan, toast the buns.

9. Sandwich pulled pork, mustard sauce and onion pickle in the bun. done!
