Ancho chile powder2 tsp. Chile powder1 tsp. Dry mustard1 tsp. Ground cumin1 Tbsp. fresh rosemary, finely chopped, or 1 tsp. Dried1 onion, super fine diced1 bay leaf cup orange juice1 tsp. Salt4 - 5 cloves garlic, minced1 or 2 jalapeno, deveined, deseeded, finely choppedMild cheddar cheese, gratedMonterey jack cheese, gratedTortilla chipsGarnish:Avocado chunksChopped cilantroSour creamGreen onionAnything else you likeDirections:Place the onion in the crockpot first and then add the trimmed up pork. Add the garlic, the chile powders, cumin, mustard, bay leaf, salt, bbq sauce, apple cider vinegar, and the orange juice.Place the lid on the crockpot and place it on high for 4 to 5 hours. After the pork is done, take out the bay leaf and the the pork chunks. Place them on a cutting board and shred the pork with two forks. Remove any big pieces of fat that are remaining.Then place the pork back into the crockpot and stir to combine with the sauce. Preheat oven to 425 degrees F. and line a baking sheet with foil. Spread tortilla chips on the tray in a single layer. Using tongs, they worked best for me, spread pork over the chips. Top with cheese and the diced jalapeno.Place in the oven for about 5 minutes or until the cheese is all melty and bubbly. Take them out of the oven and top with additional ingredients.I used avocado chunks and drizzled sour cream over all. So darn delicious!Thanks for watching and sharing!Rockin RobinP.S.
