Pulled Pork Sandwich Recipe by Rockin Robin

Pulled Pork Recipe

Ingredients:

5 lbs pork shoulder or butt, trimmed of fat
1 onion, diced
4 cloves garlic, minced
1 tsp. cumin
1/2 cup ketchup
1/3 cup red wine vinegar
2 tsp. smoked paprika
1/2 tsp. cinnamon
2 tsp. salt
4 cups chicken broth

Directions:
Trim pork of fat and cut into chunks. Place everything in a stock pot, bring to a boil and then partially cover and simmer for 2 1/2 to 3 hours. By this point, the pork should be falling apart.

Take the meat out of the sauce and shred it while removing any excess fat. At the same time turn the temperature to medium and reduce the sauce by half.

Then return the shredded pork to the sauce to reheat. Turn off the heat and enjoy in burritos, or make pulled pork sandwiches and serve with cole slaw. Feel free to add additional BBQ sauce if you like.
