Mix with a hand mixer until well combined. Set aside.In a microwave safe dish, melt the chocolate at 20 second intervals on high. Stir after each 20 seconds until the chocolate is smooth, creamy and spreadable.Line a mini muffin pan with paper liners. Spoon a small amount of chocolate into one muffin liner, about 1/4 full. Using the back of a spoon, spread the chocolate all around the bottom and up the sides of the liner. Do this for all the muffin liners and then place this into the freezer for 10 to 15 minutes or until the chocolate hardens.After 15 minutes in the freezer, take out the muffin pan and spoon in a small amount of pumpkin filling into each cup. Keep the level just below the top of the chocolate. Once all the cups are filled with peanut butter, place a small amount of creamy chocolate on top of the peanut butter.Spread the chocolate with the back of the spoon to seal the pumpkin mixture in. You shouldn't be able to see any pumpkin filling when you are done.Place this back in the freezer for 15 minutes and then you can eat them!
