Quinoa Chicken Salad
Ingredients:
cup organic quinoa, rinsed
1 cup water
1 tomato, cut into bite size pieces
Large handful of fresh basil, chopped
Mixed greens, organic
cup red onion, thinly sliced
cup feta crumbles
3 chicken thighs
Balsamic vinaigrette:

Directions:
Place the quinoa in a saucepan with the water and bring to a boil. Lower the temperature and simmer the quinoa until all the water is absorbed, about 10 minutes. Lower the temperature as it cooks. Turn off the heat and cover the pot with a lid to steam for 5 to 6 minutes.

Preheat a grill or frying pan over medium high heat. Season the chicken thighs with salt, pepper, and garlic powder. I brushed my grill with olive oil to keep the chicken from sticking.

Lay the chicken on the grill/pan and cook for about 10 minutes or until golden brown. Turn the pieces over and cook the second side for 10 minutes or until the internal temperature reaches 165 degrees F. An instant read thermometer is perfect for this.

Once the chicken is done, place it on a plate to cool.

Once the chicken and quinoa is done and cool, slice the chicken into bite size pieces.

Now you are ready to assemble the salad. Place all ingredients except the dressing in a large bowl and toss. Then add a bit of balsamic dressing and toss to coat everything. Add more dressing and toss as needed. I like to finish with the feta crumbles on top. Enjoy!
