Here is a unique dosa made using kidney beans! Of course, best things in life usually take a lot of time, just like that, you need to spend some time to ferment this dosa batter, but the final product is ultimate. Health and taste both in one.

RAJMA DOSA

Ingredients

1 cup kidney beans (rajma)
¾ cup short grain rice, soaked for 6-8 hours and drained
½ tsp fenugreek seeds (methi dana), soaked for 3-4 hours and drained
Salt to taste
Oil for drizzling
Coconut chutney to serve

Method

1. Take kidney beans in a large bowl, add water and wash it 1-2 times. Add fresh water and set aside to soak for 6-8 hours. Drain and add into a mixer jar. Add the soaked rice and soaked fenugreek seeds. Add 1½ cups water and blend to a smooth batter.
2. Transfer into a large bowl, cover and set aside to ferment for 6-8 hours.
3. Add ½ cup water and salt and mix till well combined.
4. Heat a non-stick tawa. Pour a ladleful of the batter and spread it in a circular motion to make a disc. Drizzle oil and cook for 2-3 minutes on medium heat. Fold in half and place it on a serving plate.
5. Serve hot with coconut chutney.
