Simple upma made into a delicious snack. This innovative cutlet recipe is a must try. RAWA CUTLET Ingredients1 cup fine semolina (rawa)1½ teaspoons cumin seeds1-2 green chillies, chopped1 teaspoon + 1 tablespoon chopped fresh coriander leavesSalt to taste3 teaspoons oil + for deep-frying½ medium red capsicum, chopped½ cup corn kernels 1 large raw banana, boiled, peeled and grated½ cup green peas, boiled ¼ teaspoon turmeric powder1 teaspoon red chilli powder ½ teaspoon garam masala powder ½ teaspoon chaat masala1 teaspoon sugar 1 tablespoon lemon juiceSalt to tasteMethod1. Heat 2 cups water in a non-stick pan. Add ½ teaspoon cumin seeds, half green chillies, 1 teaspoon coriander leaves, salt and 1 teaspoon oil, stir and bring to a boil. 2. Add semolina and mix till it is fully cooked and water is completely absorbed. Transfer in a bowl and cool.3. To prepare stuffing, heat remaining oil in another non-stick pan. Add remaining cumin seeds and sauté for 30 seconds. 4. Add remaining green chillies, capsicum, corn and green peas and mix well. Add raw banana, mix and cook for a minute.5. Add turmeric powder, chilli powder, garam masala powder, chaat masala, sugar, lemon juice, salt and remaining coriander leaves, mix and cook for 1-2 minutes. Transfer in another bowl and cool to room temperature.6. Heat sufficient oil in a kadai. 7. Divide the stuffing into equal portions. 8. Grease your palms with some oil and divide the semolina mixture into equal portions. Make a cavity in the center of each portion, put one portion of stuffing, seal and shape into cutlets. 9. Deep-fry the cutlets in hot oil till golden brown and crisp. Drain on absorbent paper. 10. Serve hot.
