Red Velvet Cookies | Sanjeev Kapoor Khazana

Freshly baked red velvet flavoured cookies sandwiched with butter cream frosting.

RED VELVET COOKIES

Ingredients

Few drops of edible red colour
1½ cups refined flour
1 cup castor sugar
½ cup butter
1 egg
1 teaspoon vanilla essence
1 tablespoon cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
A pinch salt
Frosting
¼ cup butter
¼ cup cream cheese
1 cup powdered sugar

Method

1. Preheat oven at 180º C. Line a baking tray with a silicon mat.
2. Cream together castor sugar and butter using an electric beater in a bowl. Add egg and whisk well. Add vanilla essence and whisk again.
3. Add edible color and whisk well. Sieve together flour, cocoa powder, baking powder, baking soda and salt into the mixture and whisk till well incorporated.
4. Scoop out the cookie batter and place each scoop on the lined baking tray. Place the baking tray in preheated oven and bake for 10-12 minutes.
5. To prepare frosting, combine butter and cream cheese in another bowl. Sift in powdered sugar and whisk well in a bowl.
6. Fill a piping bag with a star nozzle with the frosting. Pipe out frosting on some of the cookies and cover with remaining cookies.
7. Serve.
