Roasted Tomato & Garlic Soup
Serves 4-5
Recipe in English:

Ingredients:
-Tamatar (Tomatoes) peeled 1 kg
-Lehsan (Garlic) bulb 1
-Kali mirch powder (Black pepper powder) tsp or to taste
-Cayenne powder tsp
-Dried basil leaves 2 tsp
-Namak (Salt) 1 tsp or to taste
-Olive oil 2-3 tbs
-Olive oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Yakhni (Stock) 3 Cups or as required
-Fresh basil leaves 6-8
-Dried thyme tsp
-Lal mirch (Red chili) crushed tsp
-Parmesan cheese powder
-Fresh basil leaves chopped

Directions:
-On baking tray,place tomatoes and garlic bulb (cut into two halves),balck pepper powder,cayenne powder,dried basil leaves,salt and drizzle olive oil.
-Bake in preheated oven at 220 C for 25-30 minutes then remove garlic covering & discard it.
-In pot,add olive oil,onion and mix well.
-Now add baked tomatoes & garlic,stock,fresh basil leaves,mix well and bring it to boil then blend the whole mixture with the help of the blender.
-Cook on medium low flame for 15-20 minutes.
-Add dried thyme,red chili crushed and mix well.
-Garnish with parmesan cheese powder,fresh basil leaves & serve.

-Baking tray mein tamatar aur lehsan (cut into two halves) rakh ker kali mirch powder,cayenne powder,dried basil leaves,namak aur olive oil dal dein.
-Preheated oven mein 220 C per 25-30 minutes kliya bake ker lein phir lehsan ki covering ko nikal lein.
-Pot mein olive oil aur pyaz dal ker ache tarhan mix ker lein.
-Ab baked tamatar aur lehsan,yakhni aur fresh basil leaves dal ker ache tarhan mix karein aur ubal anay ka bad blender ki madad sa ache tarhan blend ker lein.
-Halki darmiyani ancch per 15-20 minutes kliya paka lein.
-Dried thyme aur lal mirch crushed dal ker ache tarhan mix ker lein.
-Parmesan cheese powder aur fresh basil leaves sa garnish ker ka serve karein.
