1 rotisserie chicken, meat picked and cleaned
6 tablespoons unsalted butter
2 medium carrots, small diced
1 medium yellow onion, small diced

1 teaspoon celery seed
1 teaspoon fresh sage, de-stemmed and roughly chopped
3 garlic cloves, minced
3 tablespoons all-purpose flour
32 ounces chicken stock (homemade or store-bought)
1 1/2 whole milk
Kosher salt to taste
Cracked black pepper, to taste
1/2 cup frozen peas

Dumplings
2 cups all-purpose flour
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon freshly cracked black pepper
1 teaspoon kosher salt
3/4 cup (6 ounces) whole milk
4 tablespoons unsalted butter, melted
