ROSEMARY AND SEA SALT BREAD ROLLS

Ingredients

1 teaspoon chopped fresh rosemary sprigs + for sprinkling
Sea salt for sprinkling
4 cups + 4 teaspoons refined flour
4 teaspoons fresh yeast
4 teaspoons castor sugar
4 teaspoons milk powder
1 teaspoon salt
2 tablespoons + 2 teaspoons butter
Oil for greasing
Milk for brushing

Method

1. Take yeast in a bowl. Add castor sugar and 2-3 tablespoons warm water, mix well and set aside to activate.
2. Take flour in another bowl. Add milk powder, salt, rosemary and activated yeast and mix. Add 2 cups water and knead into a soft dough. Add butter and knead well. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.
3. Grease a baking tray with some oil.
4. Dust worktop with some flour, place the dough and knock back to release excess air.
5. Divide the dough into equal portions, shape into balls and place on the greased baking tray. cover with damp muslin cloth and set aside to prove for 20-25 minutes.
6. Preheat oven to 180° C.
7. Brush some milk on top of proven balls and sprinkle some sea salt and chopped rosemary on top.
8. Put the tray into the preheated oven and bake for 15-20 minutes.
9. Serve hot.
