ROSEMARY AND SEA SALT BREAD ROLLSIngredients1 teaspoon chopped fresh rosemary sprigs + for sprinklingSea salt for sprinkling4 cups + 4 teaspoons refined flour4 teaspoons fresh yeast4 teaspoons castor sugar4 teaspoons milk powder1 teaspoon salt2 tablespoons + 2 teaspoons butterOil for greasingMilk for brushingMethod1. Take yeast in a bowl. Add castor sugar and 2-3 tablespoons warm water, mix well and set aside to activate.2. Take flour in another bowl. Add milk powder, salt, rosemary and activated yeast and mix. Add 2 cups water and knead into a soft dough. Add butter and knead well. Cover with damp muslin cloth and set aside to prove for 10-15 minutes.3. Grease a baking tray with some oil.4. Dust worktop with some flour, place the dough and knock back to release excess air.5. Divide the dough into equal portions, shape into balls and place on the greased baking tray. cover with damp muslin cloth and set aside to prove for 20-25 minutes.6. Preheat oven to 180° C.7. Brush some milk on top of proven balls and sprinkle some sea salt and chopped rosemary on top.8. Put the tray into the preheated oven and bake for 15-20 minutes.9.
