Sabudana Vada | 5 Best Maharashtrian Snacks With Chef Anupa | Sanjeev Kapoor Khazana

SABUDANA VADA - (Serves - 4)

Ingredients

2 cups sago (sabudana), soaked for 8 hours and drained
Oil for deep-frying
2 medium potatoes, boiled, peeled and grated
¼ cup crushed peanuts
1 tablespoon ginger-green chilli paste
1 tablespoon chopped fresh coriander leaves
Salt to taste
Juice of ½ lemon
Green coconut chutney for serving
Lemon wedge 0for serving

Method

1. Heat sufficient oil in a kadai.
2. Mix together sago, potatoes, peanuts, ginger-green chilli paste, coriander leaves, salt and lemon juice in a bowl.
3. Divide the sago mixture into equal portions, shape into balls and light flatten between your palms to make vadas.
4. Put the vadas in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
5. Serve hot with a quenelle of green coconut chutney and lemon wedge.
