Salted Caramel, Toffee Fudge Ice Cream Cupcake Jemma

IT'S ICE CREAM SEASON and not just any ice cream season - Salted Caramel Toffee Fudge season - hell yeah . Silky salted caramel ice cream rippled with a caramel sauce and studded with fudge pieces - this is the dreamiest ice cream you'll make this year. Eat it in a waffle cone or in a bowl with extra sauce and you've got yourselves an absolute TREAT!

SALTED CARAMEL CUSTARD
135g Caster Sugar
150g Double Cream
600ml Milk
1.5 tsp Vanilla
1 tsp Salt
5 Egg Yolks
50g Caster Sugar

SOUR CREAM CARAMEL
90g Sour Cream
tsp Vanilla
90g Caster Sugar
40g Water
