Savory Fish with Black Bean Garlic Sauce

Fish with Black Bean Garlic Sauce is such a savory dish. I used black bean paste with fresh garlic. If you can find black bean garlic sauce, go ahead use that without additional garlic. In the end of the video, I also showed fermented black bean, which can work too. Bell peppers and onions add additional sweetness and crunchiness to the dish. Enjoy!

Written recipe for Fish in Black Bean Garlic Sauce

Ingredients:
1 basa (swai) fish filet (or tilapia, cod), sliced
3 green onions, chopped (green parts for garnish in the end)
6 cloves garlic, minced
1 piece ginger, minced
1/2 onion, sliced
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 tbsp black bean paste
Shaoxing cooking wine
vegetable oil
salt
white pepper powder
starch

To season the fish:
Add salt, white pepper powder, and cooking wine, mix well. Coat with 1 tbsp starch.
To make slurry:
Mix 1/2 tbsp starch with 1/2 cup water.

1. Heat up the pan to high, add oil. When it's hot, place fish slices in the pan one by one.
2. Pan fry each side about 2 minutes, set aside.
3. Add bell peppers and onions to the pan, add a bit salt. Cook about 4 to 5 minutes till they soften. Set aside.
4. Add a bit more oil, saut green onion (white part), garlic and ginger for 10 seconds. Add 1 tbsp black bean paste, and mix.
6. Add fish and vegetables back to the pan. Stir fry for a minute.
7. Add remaining green onions to garnish.
8. Pour the slurry into the pan, and mix. Serve.
