Balsamic vinegar, I use Mias Kitchen2 tbsp. Olive oilDirections:Preheat oven to 425 degrees F.Rinse and scrub the sweet potatoes and then poke a few holes in the skin with a fork. This will keep the potato from exploding in the microwave.Place the sweet potatoes on a plate and place them in the microwave for somewhere between 3 and 6 minutes or until they are soft enough to insert a fork or knife easy enough.Once the potato is cool enough to handle, slice a thin slice off the top to expose the flesh.Make some oval cuts as per the video about inch thick.Turn the potato over and slice some vertical cuts about inch wide. Dont cut all the way to the bottom so that the potato will still hold together. Place the cut potato right side up on a baking sheet and brush olive oil over all. Place the pan into the oven for 10 minutes.In the meantime, combine the orange juice, balsamic vinegar and the leftover olive oil and stir.After 10 minutes in the oven, take the potatoes out and brush this balsamic, orange mixture generously over the potatoes and place them back in the oven for 5 minutes.After 5 minutes, take the potatoes out of the oven and layer on some cheese, bacon, walnuts, cheese and more walnuts, in that order.
