SCANDINAVIAN - EGG SANDWICH

In this episode, I'd like to share with you my version of a very simple recipe that we tasted in the northern European countries. I have served the mixture with sourdough bread slices.

INGREDIENTS:
4 hard-boiled eggs
100 g. (3.50 oz) cream cheese (at room temp)
1 tbsp light mayonnaise (or yoghurt)
1/2 tsp mustard
2 tbsp lemon juice
1 capia pepper (finely chopped)
1/2 cup italian parsley and fresh dill (finely chopped)
Salt, black pepper, paprika
6 slices of sourdough bread


DIRECTIONS:
Into a bowl pour the mayonnaise, mustard, lemon juice and
cream cheese.
Season with about 1/4 tsp salt and 1/8 tsp pepper or to taste
and a pinch of paprika if desired, mix.
Slice the boiled eggs into the bowl.
Mash all with a fork.
Add the capia pepper, parsley and dill, stir.
Taste for seasoning and add more if desired.
Pour couple spoons of the mixture on a slice of bread and spread.
Close the other slice of bread on top.
If desired cut them in half before serving.
