Add the sugar and stir until it dissolves. Then add the lemon juice and stir to mix in.Bring the wine mixture back up to a boil and then turn off the heat and add the butter, stirring until the butter is completely melted. Add the sour cream and use a whisk to blend it in until it is smooth and creamy. Add the lemon zest and stir it in. Taste the sauce and add a bit of sugar if needed to suit your taste. Set aside and keep warm.Preheat your grill pan over medium high heat. Rub olive oil over both sides of the salmon. Then salt and pepper one side.Once the grill pan is hot, lay the salmon skin side up. You may reduce the the heat to medium low. Let the fish grill about 4 minutes per side for a 1 inch thick piece of salmon. My fish was inch thick so I cooked it 2 minutes on the first side and 2 on the second. You know the salmon is done when it flakes.Serve the salmon and spoon the sauce over the top. Finish with a garnish of parsley. Cook up some veggies and my cucumber salad recipe and you will have a delicious lunch or dinner.Tips: There are many types of salmon you can use in this recipe such as salmon filets also called fillets, salmon steaks.
