Shahi Mutton Leg Roast
Recipe in English:

Ingredients:
-Kaju (Cashew nuts) 1/4 Cup
-Badam (Almonds) 1/4 Cup
-Pani (Water) 1/4 Cup or as required
-Hari mirch (Green chillies) 10-12
-Pani (Water) 1-2 tbs or as required
-Dahi (Yogurt) strained 1 Cup
-Kali mirch powder (Black pepper powder) tbs
-Haldee powder (Turmeric powder) tsp
-Namak (Salt) tbs or to taste
-Lal mirch powder (Red chilli powder) 1 & tsp or to taste
-Meat tenderizer 1 & tbs or Kacha papita (Raw papaya) paste 2 tbs
-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Mutton leg 1 & kg approx.

Directions:
-In spice mixer,add cashew nuts,almonds and grind well.
-Add water and grind to make a paste & set aside.
-In spice mixer,add green chillies,water,grind well & set aside.
-In bowl,add yogurt,black pepper powder,tumeric powder,salt,red chilli powder,meat tenderizer,ginger garlic paste,green chillies paste,almonds+cashew nuts paste,whisk well & set aside.
-Wash and pat dry mutton leg.
-Prick and add marks/cuts on mutton leg.
-Now add prepared marinatation,rub evenly and let it marinate for overnight in refrigerator (reserve Cup marination for later use).
-On baking tray,place aluminum foil and butter paper,place marinated mutton leg with marinade and seal the foil properly.
-Bake in preheated oven at 180 C for 1 hour & 15 minutes then grill (uncovered) in preheated oven at 180 C for 20 minutes each side.

Ajza:

-Spice mixer mein kaju aur badam dal ker ache tarhan grind ker lein.
-Pani dal dein aur grind ker ka paste tayyar ker lein & side per rakh dein.
-Spice mixer mein hari mirch aur pani dal ker ache tarhan grind ker lein & side per rakh dein.
-Bowl mein dahi,kali mirch powder,haldee powder,namak,lal mirch powder,meat tenderizer,adrak lehsan paste,hari mirch paste aur badam+kaju paste dal ker ache tarhan whisk ker lein & side per rakh dein.
-Mutton leg ko dho ker ache tarhan pat dry ker lein.
-Mutton leg ko prick ker ka marks/cuts laga lein.
-Ab tayyar marination dal ker evenly rub ker lein aur overnight kliya refrigerator mein marinate ker lein ( Cup marination ko bad mein use kernay kliya side per rakh dein).
-Baking tray per aluminum foil aur butter paper laga ker marinated mutton leg rakh ker marinade dal dein aur foil ko properly seal ker lein.
-Preheated oven mein 180 C per 1 hour & 15 minutes kliya bake ker lein phir uncovered 180 C per 20 minutes (each side) kliya grill ker lein.
