A unique recipe where eggs are cooked with onions and tomatoes and place between small buns and served like a slider.SHASHUKA SLIDERSIngredients5 eggs1 large tomato, finely chopped½ cup tomato puree4 whole wheat mini buns2 tbsps oil1 large onion, finely chopped2 tsps finely chopped garlic1 small red capsicum, finely chopped1 small green capsicum, finely chopped1 small yellow capsicum, finely choppedSalt to taste1 tsp red chilli powder1 tsp cumin powderCrushed black peppercorns to tasteDried red chilli flakes to sprinkleFrench fries to serveTomato ketchup to serveMethod1. Heat oil in a non-stick pan, add onion and garlic and sauté till translucent. Add red capsicum, green capsicum and yellow capsicum and mix well. Cook for 1-2 minutes.2. Add tomato and mix well. Add tomato puree and mix well. Cook for a minute.3. Add salt, red chilli powder and cumin powder and mix well. Cook on low heat for 3-4 minutes, sautéing in between. 4. Add ½ cup water and mix well, cook for 1-2 minutes. Make cavities in the prepared mixture and break in eggs into each cavity and sprinkle crushed black peppercorns and dried red chilli flakes and sprinkle salt. Cover and cook for 4-5 minutes.5. Slice whole wheat mini buns without cutting through. Place a cooked egg on each and garnish with coriander sprig.
