Sharing Sourdough Pizza with Kids and Friends

I have been getting the most delicious bread at a local farmers market from BAKESHACK of Orange County. Brothers Marlon and Matt invited us to their home to make two styles of pizza. Neapolitan and NY. We learned that the 00 flour is great for high heat pizza like Neapolitan where they cook it in an 850 degree oven for about 60- 90 seconds!!! They ferment their dough for about 48 hours opposed to most pizzerias which may only ferment their pizza dough for about 6 hours tops.

If you want to make more than 2 sourdough balls just scale everything up while keeping the same percentages.

WEIGHT INGREDIENT BAKERS PERCENTAGE
285g Type 00 White Flour 90.00%
32g Whole Wheat Flour 10.00%
212g H2O @ Room Temperature 67.00%
6g Diastatic Malt (optional) 2.00%
9g Salt 2.90%
47g Mature, liquid starter 15.00%

Let ferment for 48 hours.
