SHRIMP BURRITO RECIPE:

Chipotle sauce
Ingredients:
1 cup plain yogurt
1 Tbsp. mayo
1 chipotle pepper, deseeded, plus 1 tsp. or more of the adobo sauce
1/2 tsp. ground cumin
a little less than 1 Tbsp. of raw honey
1 tsp. lime juice
pinch of salt
zest from 1 lime


Cilantro lime rice, warmed up if reheating.
large shrimp (4 to 6 per burrito) shelled and deveined
Monterey jack cheese, grated
4 cloves garlic, minced
flout tortillas
butter lettuce leaves
olive oil

Directions:

Marinate the shrimp in a bowl by combining the shrimp, olive oil, garlic, and the juice of one lime. Stir to combine. Cover with plastic wrap and refrigerate for 20 to 30 minutes.

Mix the yogurt, mayo, the chipotle pepper, adobo sauce, cumin, honey, lime juice, lime zest, and salt in a food processor and pulse until combined. Chill until ready to use. I like storing my chipotle sauce in a squeeze bottle.

Preheat a grill pan over medium high heat. Place the shrimp on the grill and cook for about 3 to 4 minutes. Then turn them over and cook an additional 2 to 4 minutes or until they turn pink and are translucent. Set aside and keep warm.

Preheat the oven to broil. Place a flour tortilla or two on a baking sheet and spread Monterey Jack cheese over the tortilla and place 8 inches under the heating element of the oven. Watch it closely as it will melt the cheese quickly.

Take the tortillas out of the oven and place some cilantro lime rice down the center of the tortilla. Add several shrimp, 6 worked for me, and then drizzle some chipotle sauce over all. Roll the burrito up and enjoy!

For the healthy version:

Lay two leaves of butter lettuce on a plate and top with a spoonful of cilantro lime rice, 2 shrimps and a generous drizzle of chipotle sauce. These make great appetizers.
