Smoky Jollof Rice - I'll Show You How In Under 3 Minutes

Vegan Jollof Rice Ingredients:
2 large red bell peppers
6 tomatoes
2 red onions, one sliced & one roughly chopped
1 scotch bonnet chili
Sunflower oil (approx. 5 tbsp)
1/2 tbsp dried thyme
1 tbsp hot curry powder
2 bay leaves
1 vegetable stock cube
1 tbsp tomato pure
Salt, to taste
3 cups Tilda Golden Sella Basmati rice
2 cups water

This is your sign to try this method of roasting the veggies first before blending! This rice was absolutely delicious and aromatic; the true definition of party Jollof. I used golden sella basmati rice as it gives great results every time.

Jollof rice is a classic West African meal enjoyed in countries such as Nigeria, Senegal, Cameroon, Gambia and Ghana.
