Edna Lewis' Cheese Soufflé

PREP TIME: 18 minutes
COOK TIME: 20 minutes
SERVES: 4

INGREDIENTS
5 ounces sharp white cheddar
3 ounces Gruyère
2 tablespoons butter
2 tablespoons flour
1 cup warm milk
3 egg yolks, slightly beaten
1/2 teaspoon salt
1/4 teaspoon cayenne
1 teaspoon dry mustard
5 egg whites
