Southindian tiffin sambar-Instant Pot method | Gayathiri's Cookbook

This Restaurant style Southindian tiffin sambar recipe is the best sambar recipe for all tiffins like Idly, dosa, pongal and all upma varieties.It tastes awesome with mini idles when drizzled with hot ghee.

Ingredients:
Toordal- 1 cup
Onions- 2
Tomatoes- 6
Carrots-2
Bell pepper- 2
Turmeric powder- 1 tsp
Salt- As needed
Hing- A pinch
Sambar powder- 5 Tsp
Gramflour- 2 Tsp
Green chillies- 6
Fennel seeds- 1.5 tsp

Directions:
1. Put the instant pot on sauté mode.Heat 2 tsp oil. Add mustard seeds, fennel seeds, green chillies and onions. Saute until translucent.
2.Add tomatoes and cook until soft.
3. Then add carrots and bell pepper.(optional).
4. Add turmeric powder, salt, hing, curry leaves, sambar powder, toordal and 6 cups of water.. Mix everything well.
5.Close the lid with the pressure valve in sealing position.Put the instant pot on Manual/Pressure mode for 20 minutes and let the pressure release naturally.
6. Keep it on sauté mode again after pressure release. Mix 2 tsp gram flour in water and then add it to the sambar.
Let it boil on sauté mode for 2 minutes. then switch off the stove. Garnish with coriander leaves.
