Spaghetti squash is so easy to make and this dish is delicious and healthy with the addition of kale, sauted onion, garlic and fresh grated parmesan cheese.Visit my website: http://www.cooking-mexican-recipes.comMy Free Newsletter: http://www.cooking-mexican-recipes.com/food-ezine.htmlConnect with me on FACEBOOK yet? http://www.RobinInTheKitchen.comTWITTER: https://twitter.com/#!/Robin_Rockin Pinterest: http://www.pinterest.com/rockinrobin14/Google+: http://tinyurl.com/mkeeqoxInstagram: http://instagram.com/RockinRobinCooksThis dish makes a great substitute for pasta and works for the Paleo diet if you remove the parmesan cheese.It's low in calories but full of flavor and delicious for dinner or anytime.Ingredients:1 (2 - 3lb) spaghetti squash2 cloves of garlic, minced2 Tbsp. olive oil1 yellow onion, diced1/4 to 1/3 cup grated parmesan cheese, fresh1/3 cup sliced almonds, toasted1/4 cup fresh parsley, chopped1 1/2 cups of kale, leaves removed from stalk (stem)salt to tasteDirections:Preheat the oven to 375 degrees F.Pre cook the squash in the microwave for about 8 minutes or until the squash is soft enough to cut in half.Remove the seeds by scraping them out with a fork. You can save the seeds and cook them later, just as you would with pumpkin seeds.Pour a little olive oil into each half of the squash and spread the oil around with your clean fingers. Place flesh side down on a baking sheet. I lined my sheet with aluminum foil for easy clean up.Roast in the oven at 375 degrees F. for 45 to 65 minutes or until tender. When you place a fork into the squash and there is very little resistence you know it's done.While the squash is roasting, now is the time to saute the onions in a frying pan with 2Tbsp.of olive oil. Start out with the heat on medium high and then you may lower it as the onion cooks a bit. You are going to cook the onions 10 to 12 minutes.Next add the kale to the pan and add a little drizzle of olive oil and a pinch of salt. Saute for about 7 or 8 minutes until the kale softens.Then add the garlic and saute an additional 1 minute. Turn off the heat and set aside.Once the squash is done, let them cool for at least 10 minutes and then take a fork and scrape out the squash, which will resemble spaghetti.Place the squash into a bowl and add the onion/garlic mixture. Add a drizzle of olive oil and give it a toss.Then add the parmesan cheese, parsley, almonds and a pinch of salt. Toss thouroughly and serve.
