Freshly made nachos topped with creamy white sauce.SPICY NACHOS WITH WHITE SAUCEIngredients3 tablespoons maize flour (makai ka atta)4 tablespoons whole wheat flour (atta)3 tablespoons gheeSalt to taste3-4 ice cubes10-12 curry leaves2 green chillies, hand-torn1 teaspoon carom seeds (ajwain)Oil for deep-fryingRed chilli powder for sprinklingChaat masala powder for sprinklingWhite sauce1 cup milk¼ teaspoon dried oregano¼ teaspoon chilli flakes1 small green capsicum, finely chopped¼ cup boiled sweet corn kernelsMethod1. To make homemade salted butter, mix together ghee, salt and ice cubes in a bowl. Refrigerate to chill. 2. To make ground paste, blend together curry leaves, torn green chillies and salt in a blender jar to a smooth paste using water as required. 3. To make nachos, mix together maize flour and 3 tablespoons whole wheat flour, carom seeds, salt and ground paste in a bowl and knead into a semi-stiff dough using warm water as required.4. Divide the dough into equal portions, flatten each portion by pressing between your palms and roll out into a thin disc. 5. Heat sufficient oil in a kadai. 6. Poke holes on nacho disks using a fork and cut into triangles using a pizza cutter. 7. Deep-fry the nachos in hot oil till golden-brown and crisp. Drain on absorbent paper and transfer to a bowl, sprinkle chilli powder and chaat masala powder on top, toss and set aside. 8. To make white sauce, heat homemade salted butter in a non-stick pan. Add the remaining whole wheat flour and mix well. Add milk, mix well and cook for 1-2 minutes, stirring continuously to make sure that no lumps are formed. 9. Add salt, oregano, chilli flakes and mix well and cook for a minute, stirring continuously. Add capsicum, sweet corn kernels, and mix well. Remove from heat and set aside. 10.
