Steak Fajitas With Skirt Steak - Best Way To Slice The Steak by Rockin Robin Cooks

Steak fajitas are just about everyone's favorite! Now you can make them at home. It's important, in my opinion, to use skirt steak. It has a bit more marbling than flank steak therefor making for a more tender and flavorful fajitas.

Also you want to marinate the steak at least 6 hours but preferable overnight. This will give the beer and lime to really tenderize the meat and the spices to really infuse their flavor.

When you bbq the steak, heat your grill to medium high heat and don't forget to rub a little olive oil on the grates to keep the steak from sticking.

Since the meat is very thin to begin with, cooking it will only take a few minutes. I cooked the steak between 6 and 8 minutes. It also depends on how hot your grill is.

I turned the meat after about 2 1/2 to 3 minutes. I was looking for medium rare. I think it's better to keep the steak a little pink so it won't dry out and get tough.

Cutting the steak is important too. Make sure to cut against the grain like in the video. This will insure a more tender steak and make chewing it easier.

Steak fajitas are not complete without grilled onions and bell peppers so grill those up. They only take a few minutes and really make the dish.

Just slice the onions and bell peppers into strips and cook them in a cast iron pan over high heat. At least start with high heat to get the pan really hot. Then add the oil, swirl it around the pan and add the veggies.

Cook the onions and bells until the onion turns a nice golden brown and the bell peppers have softened. Also getting the pan really hot will help char the peppers a bit, giving them a nice flavor.

When you put it all together, heat up some corn or flour tortillas and then add the steak, then the veggies, guacamole, sour cream and a sprinkle of grated cheese. Yum!
