Ingredients2 cups quinoa1 can black beans1 can corn1 ea bell pepper cup Cilantro1 tbsp minced garlic3 tbsp green onions chopped1 Lemon or lime Vinaigrette2 cups Vegetable brothInstructionsIn a skillet, saut the minced garlic with olive oilThen add in the vegetable broth and the quinoa.
