The result is a refreshing dessert that is a little bit healthy and decadent. And they look amazing! I was even thinking of topping these with a drizzle of chocolate. These are also a gluten free dessert.Strawberry cheesecake bites recipeIngredients:32 oz. organic strawberries, medium size1 container of blueberries, organic, fresh8 oz. cream cheese, softened2 Tbsp. organic butter, softened1/2 cup powdered sugar1 tsp. vanilla extractDirections:Cream together the cream cheese and butter with a mixer. Add the vanilla extract and mix to combine. Add the sugar by the tablespoon full and mix over medium speed. Add a little more of the sugar, mix and repeat until all the sugar is mixed in.Fill a piping bag with the cream cheese filling. Use a medium sized tip on the piping bag.Cut the stem off the of strawberries so that you end up with a flat bottom to allow the strawberry to stand up. Then cut a "x" shape starting at the tip of the strawberry. Be sure to not slice all the way through the strawberry, stop at about 1/4 inch from the bottom of the strawberry. Open the strawberry at the top with your fingers and insert the piping bag tip in and fill with the cheesecake mixture.Top with a single blueberry and serve.
