Stir and cook for about 6 minutes stirring occasionally. You want the fruit to be broken down but not totally.Add the strawberries and cook 3 minutes more. Cook long enough to just soften the strawberries and not break them down too much.Remove the fruit from the heat and stir in the almond extract.I placed my pan of fruit into an ice bath to cool it down quickly. You can also just place it in the refrigerator until chilled. Remember it must be cold before you put the parfait together.In the mean time, place the sliced almonds in a frying pan over medium low heat. Stir frequently as these can burn fast. Toast the almonds until they are a golden brown. Set aside to cool.Pour the whipping cream in a mixing bowl and add 2 to 3 tablespoons of sugar along with 1 tsp. of almond extract. Whip until medium peaks.Now we are ready to put the parfait together. You can layer it anyway you want but here is what I did.I first placed the fruit compote into the bottom of a glass. I used a heaping tablespoon or two. Then a placed a layer of the whipped cream topped with a sprinkle of the toasted almonds on top. I repeated the layers and ended with the almonds and a fresh strawberry slice on top.This is so delicious. You can taste the tartness from the rhubarb and the sweetness from the strawberries. The almonds give this parfait a needed toasted crunch and of course the whip cream is well creamy!
