Strawberry Salad - W/Walnuts, Goat Cheese, Strawberry Vinaigrette by Rockin Robin

Strawberry Salad

Strawberry salad dressing
Ingredients:
1 cup organic strawberries, quartered
2 Tbsp olive oil
4 tsp. balsamic vinegar
2 tsp. apple cider vinegar
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. ground pepper

Directions:
Place all ingredients into a blender and mix until smooth and creamy. Will keep a good week in the refrigerator.

Strawberry Salad

5 oz. baby greens
1 cup organic strawberries, quartered
8 spears of asparagus, trimmed
1/4 cup red onion, thinly sliced
3/4 cup walnuts, toasted
3 oz. goat cheese, cut into small cubes
strawberry vinaigrette (recipe above)

Directions:
Rinse and trim off the fibrous end of the asparagus and place in a pan of simmering water. Cook for about 2 minutes or until the asparagus is just crisp tender.

Pour the asparagus into a colander and rinse with cold water to stop the cooking process and retain the bright green color. Cut the asparagus into bite size pieces.

In a dry frying pan over medium low heat, place the walnuts in to toast for 5 to 10 minutes. Stir frequently to keep the walnuts from burning. Once toasted pour them into a bowl and set aside to cool.

In a large salad bowl, combine the baby greens, asparagus, onion, walnuts, strawberries and some of the dressing and toss until well combined. Add the goat cheese and give it a light toss.

Serve and enjoy!
