Will keep a good week in the refrigerator.Strawberry Salad5 oz. baby greens1 cup organic strawberries, quartered8 spears of asparagus, trimmed1/4 cup red onion, thinly sliced3/4 cup walnuts, toasted3 oz. goat cheese, cut into small cubesstrawberry vinaigrette (recipe above)Directions:Rinse and trim off the fibrous end of the asparagus and place in a pan of simmering water. Cook for about 2 minutes or until the asparagus is just crisp tender.Pour the asparagus into a colander and rinse with cold water to stop the cooking process and retain the bright green color. Cut the asparagus into bite size pieces.In a dry frying pan over medium low heat, place the walnuts in to toast for 5 to 10 minutes. Stir frequently to keep the walnuts from burning. Once toasted pour them into a bowl and set aside to cool.In a large salad bowl, combine the baby greens, asparagus, onion, walnuts, strawberries and some of the dressing and toss until well combined.
