This dish is tradionally known as Kalonji Barvan Baingan. Kalonji/Nigella is a dark and mysterious spice that adds flavorful surprise to this dish that will make eggplants taste superb.Baby egg plant (bringal) 500 gRed chilly 5nCoriander seeds 2 tbMustard seeds 1 tsCumin seeds 1 tsFenugreek seeds ½ tsFennel seeds 1 tsKalonji seeds 1 tbAjwain ¼ tsSaltTurmericAmchoor powder 1 tsChilly powder 2 tbOil 3 tbChopped coriander 1 b Wash the egg plant and give slit criss cross. In pan add red chilly, coriander seeds, slightly roasted and add mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, kalonji seeds, ajwain , put all these ingredients into the blender and make powder, in this powder add turmeric, amchoor powder, salt, chilly powder, mix all of them and add water and make thick paste.
