Mixed vegetable and paneer mixture stuffed in capsicum roundels and shallow fried.

STUFFED CAPSICUM TIKKI

Ingredients

1 large green capsicum
1 large red capsicum
1 large yellow capsicum
1 tablespoon oil + for shallow-frying
1-2 green chillies, chopped
¼ cup chopped mixed capsicum
½ cup finely chopped cabbage
1 small tomato, seeded and finely chopped
2 medium raw banana, boiled, peeled and grated
½ cup grated cottage cheese (paneer)
2 tablespoons grated processed cheese
½ teaspoon red chilli powder
1 teaspoon green chilli sauce
Salt to taste
1 teaspoon sugar
A large pinch dried oregano
1½ teaspoons chopped fresh parsley
Grated mozzarella cheese for topping

Method

1. Heat 1 tablespoon oil in a non-stick pan. Add green chillies and mixed capsicum and mix.
2. Add cabbage, mix and sauté for a minute. Add tomato and sauté till tomato turns soft and pulpy.
3. Add raw banana and mix well. Add cottage cheese and processed cheese and mix well.
4. Add chilli powder, chilli sauce, salt, sugar and oregano and mix well. Add parsley and mix well. Transfer in a bowl and cool.
5. Stuff the capsicums with the prepared mixture and refrigerate to chill. Cut into thick slices.
6. Heat some oil in a non-stick pan. Place the stuffed capsicum slices and shallow-fry till evenly done from both sides. Top each slice with some mozzarella cheese, cover and cook till cheese melts.
7. Serve hot.
