Mixed vegetable and paneer mixture stuffed in capsicum roundels and shallow fried.STUFFED CAPSICUM TIKKI Ingredients1 large green capsicum1 large red capsicum1 large yellow capsicum 1 tablespoon oil + for shallow-frying 1-2 green chillies, chopped ¼ cup chopped mixed capsicum ½ cup finely chopped cabbage1 small tomato, seeded and finely chopped2 medium raw banana, boiled, peeled and grated ½ cup grated cottage cheese (paneer)2 tablespoons grated processed cheese½ teaspoon red chilli powder1 teaspoon green chilli sauceSalt to taste1 teaspoon sugarA large pinch dried oregano1½ teaspoons chopped fresh parsley Grated mozzarella cheese for toppingMethod1. Heat 1 tablespoon oil in a non-stick pan. Add green chillies and mixed capsicum and mix.2. Add cabbage, mix and sauté for a minute. Add tomato and sauté till tomato turns soft and pulpy. 3. Add raw banana and mix well. Add cottage cheese and processed cheese and mix well.4. Add chilli powder, chilli sauce, salt, sugar and oregano and mix well. Add parsley and mix well. Transfer in a bowl and cool. 5. Stuff the capsicums with the prepared mixture and refrigerate to chill. Cut into thick slices.6. Heat some oil in a non-stick pan. Place the stuffed capsicum slices and shallow-fry till evenly done from both sides. Top each slice with some mozzarella cheese, cover and cook till cheese melts.7. Serve hot.
